This Ground Turkey Stuffed Peppers recipe is a healthy and delicious meal featuring colorful bell peppers filled with a savory mix of ground turkey, cauliflower rice, mushrooms, and Italian herbs, all topped with melted cheddar cheese. Ingredients

Peppers

  • 3 peppers (assorted colours, 330g seeds and stalks removed)

Filling

  • 2 tbsp olive oil
  • 1 small onion (60g, finely chopped)
  • 14 oz ground turkey (400g, 7% fat)
  • 2 garlic cloves (minced)
  • 1 cup cauliflower rice (120g, frozen)
  • 1 cup mushrooms (chopped, 80g)
  • 3 tbsp tomato puree
  • 1 tbsp dried Italian herbs
  • 1/2 tsp salt (or more to taste)
  • 1/2 tsp pepper

Toppings

  • 1 1/4 cup grated cheddar (120g)
  • 2 tbsp fresh parsley (finely chopped)

Instructions

  1. Pre-roast Peppers: Heat the oven to 190°C (375°F). Halve the peppers lengthways, remove seeds and cores, then rub with a drizzle of olive oil. Season with salt and pepper. Place the peppers in a casserole dish and roast in the oven for 15 minutes to soften.
  2. Make the Filling: In a frying pan, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and sauté for 2-3 minutes until softened. Add minced garlic and cook for an additional 1 minute until fragrant.
  3. Cook Turkey and Vegetables: Add the ground turkey to the pan and cook until no longer pink, about 4-5 minutes, breaking up the meat as it cooks. Stir in cauliflower rice, chopped mushrooms, tomato puree, dried Italian herbs, salt, and pepper. Continue cooking for 5-6 minutes until most moisture is absorbed and the mixture turns golden brown. Mix in 1/4 cup of grated cheddar and 2 tablespoons of fresh parsley.
  4. Assemble and Bake: Remove the pre-roasted peppers from the oven and fill each with the turkey mixture. Top the stuffed peppers with the remaining grated cheddar cheese. Return the dish to the oven and bake for 10-15 minutes, or until the cheese melts and begins to turn golden and bubbly.

Notes

  • Using frozen cauliflower rice is convenient, but fresh can be substituted if preferred.
  • Adjust seasoning with salt and pepper to taste, especially if using salted cheese.
  • For a spicier twist, add red pepper flakes to the filling.
