Ingredients

Bell Peppers

  • 6 bell peppers

Filling

  • 1 lb ground turkey
  • 1 large yellow onion, chopped
  • 1 lb mushrooms, sliced
  • 2 cups cooked rice
  • 25 oz Italian pasta sauce, divided
  • 1 tsp oil (for cooking)
  • 1 tbsp salt (adjust to taste)
  • 1 tsp black pepper (adjust to taste)

Topping

  • 1 cup mozzarella cheese

Instructions

  1. Prep: Begin by trimming the bell peppers; remove the seeds and core from each pepper to create a hollow cavity suitable for stuffing.
  2. Cook Veggies & Turkey: Heat the oil in a pan over medium heat. Add the chopped onion and sliced mushrooms and sauté until they turn golden brown. Then, add the ground turkey and break it up with a spatula while cooking until browned thoroughly.
  3. Cook Filling: Stir in the cooked rice and half of the Italian pasta sauce into the pan with the turkey mixture. Season with salt and black pepper to taste, mixing well to combine all ingredients evenly.
  4. Stuff & Cook Peppers: Stuff each prepared bell pepper with the turkey and rice filling. Pour the remaining sauce combined with two cups of water into the bottom of a baking dish. Arrange the stuffed peppers upright in the dish and top each pepper with mozzarella cheese.
  5. Bake: Place the baking dish in a preheated oven at 375°F (190°C) and bake the peppers for 40 minutes until they are tender and the cheese is melted and slightly golden.
  6. Serve: Remove from oven, let cool slightly, then serve warm and enjoy this hearty, delicious meal.
