A delicious and easy one-skillet dinner that brings all the flavors of a ground beef burrito to your table in under 30 minutes. Perfect for a quick weeknight meal that the whole family will love.

Ingredients

Ground Beef Mixture:

  • 1 ½ pounds lean ground beef
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • 3 tablespoons taco seasoning
  • 1/2 cup water
  • ½ cup instant white rice
  • ½ cup chicken or beef broth
  • 19 ounces red enchilada sauce
  • 15 ounce can black beans, drained and rinsed
  • 15 ounce can pinto beans, drained and rinsed

Additional Ingredients:

  • 6 small flour tortillas, sliced into 1-inch strips
  • 1 cup shredded cheddar jack cheese

Instructions

  1. Cook Ground Beef: Brown the ground beef in a large skillet over medium heat for about 5 minutes.
  2. Add Onion and Garlic: Add diced onion and minced garlic, cook until onion softens, about 2 minutes.
  3. Season and Simmer: Stir in taco seasoning and water, simmer for 1-2 minutes.
  4. Add Remaining Ingredients: Mix in rice, broth, enchilada sauce, and beans. Simmer covered for 5 minutes until rice is tender.
  5. Combine Tortillas and Cheese: Stir in tortilla slices, sprinkle cheese on top. Cover until cheese melts, about 2-3 minutes.
  6. Serve: Top with sour cream, guacamole, and cilantro before serving.

  • Use 88% lean ground beef and drain excess grease if needed.
  • Consider making your own taco seasoning for a personalized touch.
  • Opt for reduced-sodium or no salt broth to control saltiness.
