  1. Preheat the grill: Light a gas grill to medium heat. If using a charcoal grill, wait until all other foods have been grilled before placing the peaches on to avoid flare-ups and burning.
  2. Prepare the peaches: Run a sharp knife along each peach’s seam to split them in half. Carefully remove the pit from each half. Brush the cut sides of peaches lightly with olive oil to prevent sticking and promote grill marks.
  3. Grill cut side down: Place the peaches cut side down on the preheated grill. Cook undisturbed for 4 to 5 minutes until well-marked with grill lines and slightly softened.
  4. Grill the skin side: Flip the peaches over so the skin side touches the grill grates. Continue grilling for another 4 to 5 minutes until the skin is charred and the fruit is tender but still holds shape.
  5. Serve: Remove the grilled peaches carefully from the grill. Serve warm with a scoop of vanilla or butter pecan ice cream for a decadent finishing touch.
