Ingredients

Chicken and Seasoning

  • 4 boneless, skinless chicken breast halves
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Toppings

  • 1 large avocado, peeled, seeded, and mashed
  • 4 slices provolone cheese (or your favorite cheese)
  • 1/2 red onion, thinly sliced (or pickled red onion)
  • 4 leaves leafy green lettuce, washed and patted dry

Buns

  • 4 hamburger buns

Instructions

  1. Chicken seasoning: In a small bowl, mix together chili powder, garlic powder, onion powder, ground cumin, dried oregano, black pepper, and salt. Lightly coat each chicken breast with olive oil, then evenly sprinkle the seasoning mixture over both sides of the chicken breasts. Set aside to allow the flavors to meld.
  2. Grill chicken: Preheat a clean grill over medium-high heat and lightly grease it. Place the seasoned chicken breasts onto the hot grill. Cook for about 3 to 5 minutes on each side, or until the chicken reaches an internal temperature of 160°F (71°C) and is cooked through. Remove the chicken from the grill and cover loosely to keep warm, noting that it will continue to cook slightly off the heat.
  3. Prepare burger toppings: In a bowl, mash the avocado until creamy. Optionally, spritz with a little lemon juice to prevent browning and add a fresh flavor. Prepare the remaining toppings by slicing the red onion thinly and washing and drying the leafy green lettuce.
  4. Assemble the sandwich: Place a grilled chicken breast on the bottom half of each hamburger bun. Top each with a slice of provolone cheese, a generous spoonful of mashed avocado, slices of red onion, and a leaf of lettuce. Cover with the top bun and serve immediately. Enjoy your delicious grilled chicken sandwich!

Notes

  • Make sure to preheat the grill properly to get nice grill marks and prevent sticking.
  • You can substitute provolone cheese with mozzarella, cheddar, or any cheese you prefer.
  • For extra flavor, consider toasting the buns on the grill for a minute before assembling.
  • If you prefer, you can use pickled red onions instead of fresh for a tangier bite.
  • Check chicken internal temperature with a meat thermometer for safety and best results.
