Ingredients

Wet Ingredients

  • 1.5 cups nonfat plain Greek yogurt

  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • ½ tsp kosher salt

Instructions

  1. Mix Wet Ingredients: In a large bowl, whisk together the nonfat plain Greek yogurt, eggs, milk, and vanilla extract until smooth and well combined.
  2. Prepare Dry Ingredients: In a separate bowl, combine the all-purpose flour, granulated sugar, baking powder, and kosher salt, mixing evenly.
  3. Combine Batter: Gently fold the dry ingredients into the wet ingredients using a flat spatula, mixing just until combined to avoid overmixing which can make the waffles tough.
  4. Preheat Waffle Iron: Heat your waffle iron according to the manufacturer’s instructions. Once hot, spray it lightly with oil to prevent sticking.
  5. Cook the Waffles: Pour the batter into the center of the preheated waffle iron. Close the lid and cook for about 2 minutes or until the waffles are browned on the outside and cooked through in the middle.
  6. Repeat Cooking: Remove the cooked waffles and spray the iron again with oil before adding more batter. Continue this process until all batter is used.
  7. Storage and Reheating: Store leftover waffles in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat in a toaster or toaster oven until warm. You can toast waffles directly from frozen.
