Instructions

  1. Melt the Chocolate: In a small saucepan, combine your choice of almond or cashew milk with the dark chocolate. Place over medium-low heat and stir frequently to gently melt the chocolate. Be careful not to boil the mixture.
  2. Add Sweeteners and Flavor: Remove the saucepan from heat, then whisk in the raw honey (or maple syrup) and vanilla extract until fully incorporated. Let this mixture cool for about 20 minutes to avoid curdling when adding yogurt.
  3. Incorporate Greek Yogurt: After cooling, add the full fat unsweetened Greek yogurt to the chocolate mixture. Whisk thoroughly until you achieve a smooth, creamy consistency without lumps.
  4. Portion the Mousse: Spoon or pour the mousse into four individual glasses or small jars, dividing it evenly.
  5. Chill to Set: Refrigerate the mousse for at least 4 hours to allow it to fully set and develop a creamy texture.
  6. Garnish and Serve: Just before serving, garnish the mousse with fresh berries, a sprinkle of grated dark chocolate, and a few mint leaves for a fresh, elegant finish.
