Ingredients

Gluten-Free Chocolate Brownies

  • 8.75 tablespoons butter or dairy free butter
  • 0.44 cup dark chocolate chips
  • 1.75 large eggs
  • 0.66 cup granulated sugar
  • 0.22 cup packed brown sugar
  • 0.88 teaspoon vanilla extract
  • 0.44 cup + 2 tablespoons gluten free all purpose flour with xanthan gum (e.g., GFJules)
  • 0.22 teaspoon baking powder
  • 0.44 teaspoon salt
  • 1.75 tablespoon unsweetened cocoa powder (100% cacao)
  • 0.88 teaspoon espresso powder (such as Civilized Coffee Espresso Powder)

Tiramisu Topping

  • 7 oz mascarpone cheese, room temperature
  • 0.88 cup heavy cream, cold
  • 0.22 cup powdered sugar (confectioners sugar)
  • 0.88 teaspoon vanilla extract
  • 0.88 teaspoon espresso powder (such as Civilized Coffee Espresso Powder)
  • 0.88 tablespoon unsweetened cocoa powder (divided: 1/4 teaspoon in whipped cream, remainder for dusting)

Instructions

  1. Prepare Pan and Preheat Oven: Preheat your oven to 350°F (175°C) and line an 8×8 inch metal baking pan with parchment paper, leaving overhang or tucking in edges for easy removal. Set aside.
  2. Melt Butter and Chocolate: Over very low heat, melt the butter and dark chocolate chips together, stirring occasionally until smooth. Remove from heat and allow to cool slightly.
  3. Mix Eggs and Sugars: In a large mixing bowl, beat the eggs until light and fluffy. Add both granulated and brown sugars, mixing well to combine.
  4. Add Chocolate Mixture and Vanilla: Pour in the melted chocolate and butter mixture along with vanilla extract. Mix thoroughly.
  5. Incorporate Dry Ingredients: Sift together gluten-free flour, baking powder, salt, unsweetened cocoa powder, and espresso powder. Add to the wet ingredients and mix until just combined, forming the brownie batter.
  6. Bake Brownies: Pour the batter into the prepared pan and spread evenly. Bake for 35 minutes total. At 25 minutes, loosely cover the brownies with foil to prevent over-browning. Check doneness by inserting a toothpick into the center; it should come out clean.
  7. Cool Brownies: Remove the brownies from the oven and let them cool completely in the pan before topping.
  8. Chill Mixing Bowl: While brownies cool, chill a large mixing bowl (and ensure heavy cream is cold) for about 15 minutes to aid whipping.
  9. Make Tiramisu Whipped Cream: In the chilled bowl, combine mascarpone cheese and cold heavy cream. Beat for 1-2 minutes until thick and creamy.
  10. Add Flavorings and Whip: Add powdered sugar, vanilla extract, espresso powder, and 1/4 teaspoon cocoa powder. Beat on high speed for about 2 minutes until stiff peaks form, scraping down the bowl as needed.
  11. Top Brownies: Using the parchment paper edges, lift the brownies from the pan and place them on a cutting board. Spread the tiramisu whipped cream evenly in a thick layer over the brownies.
  12. Dust with Cocoa: Using a fine mesh strainer, dust the top of the whipped cream layer evenly with the remaining cocoa powder.
  13. Slice and Serve: Slice the brownies into 14 servings using a sharp knife warmed under hot water and dried between cuts for the cleanest slices. Enjoy immediately or refrigerate.
  14. Storage: Store leftovers in a sealed container in the refrigerator for up to 5 days.

Notes

  • For best whipped cream results, ensure the mixing bowl and heavy cream are very cold before whipping.
  • Covering the brownies loosely with foil during baking prevents them from burning on top while allowing the center to cook through.
  • Using parchment paper with an overhang allows easy lifting of the brownies out of the pan.
  • Run the knife under hot water and dry it between slices to get clean brownie cuts.
  • This recipe is naturally gluten-free if a certified gluten-free flour blend is used.
  • Dairy-free butter can be substituted to make the brownies dairy-free, but mascarpone topping would need a suitable alternative.
  • Using quality espresso powder enhances the tiramisu flavor dramatically.
