Featuring creamy mashed sweet potatoes blended with subtle sweetness and warm vanilla, topped with a crunchy pecan streusel made with dairy-free butter and gluten-free flour, this casserole is perfect for holiday meals or cozy family dinners. It’s baked until golden and can be broiled for an extra crispy topping.

Ingredients

Sweet Potato Mixture

  • 3 lbs sweet potatoes
  • ¼ cup almond, cashew, or coconut milk
  • ¼ cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • ¼ cup dairy-free butter, melted

Pecan Topping

  • 1 cup pecans, chopped (size preference: fine or chunky)
  • ½ cup dairy-free butter, melted
  • ½ cup brown sugar, packed
  • ½ cup gluten-free flour
  • 1 teaspoon cinnamon

Instructions

  1. Cook the potatoes: Boil or steam the sweet potatoes until they are very tender and can be easily pierced with a fork, about 20-25 minutes. Drain and set aside.
  2. Prepare the topping: While the sweet potatoes are cooking, combine the chopped pecans, ½ cup melted dairy-free butter, brown sugar, gluten-free flour, and cinnamon in a bowl. Mix thoroughly and set aside.
  3. Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9 x 13-inch baking dish to prevent sticking.
  4. Mash the sweet potatoes: Peel the cooked sweet potatoes and place them in a large mixing bowl. Use a hand mixer to mash them until smooth. Add the remaining ¼ cup melted dairy-free butter, almond milk, sugar, eggs, vanilla extract, and salt. Mix thoroughly to create a creamy, uniform mixture.
  5. Assemble the casserole: Spread the sweet potato mixture evenly in the prepared baking dish, smoothing the top with a spatula.
  6. Add the pecan topping: Sprinkle the pecan topping mixture evenly over the sweet potato layer.
  7. Bake the casserole: Place the dish in the oven and bake for 35-40 minutes until the topping is golden brown and the casserole is heated through.
  8. Optional broiling step: For a crispier topping, broil the casserole for 2-3 minutes after baking. Watch closely to prevent burning.

Notes

  • This recipe is naturally gluten-free when using gluten-free flour and dairy-free ingredients.
  • Use dairy-free butter alternatives such as margarine or coconut oil to keep it dairy-free.
  • You can adjust the pecan size in the topping to your preference, from finely chopped to chunky pieces.
  • If you prefer a sweeter casserole, increase the sugar or brown sugar slightly.
  • Keep an eye on the casserole if broiling, as it can burn quickly.
  • Store leftovers covered in the refrigerator for up to 4 days.
  • To reheat, warm in the oven at 350°F for 15-20 minutes or until heated through.
