Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) to prepare for baking the scones.
  2. Mix Dry Ingredients: In a large bowl, whisk together all dry ingredients except the blueberries—flour, baking powder, salt, cinnamon—to ensure even distribution.
  3. Cut in Butter: Cube the frozen butter and cut it into the dry ingredients using a fork or pastry cutter until the mixture becomes crumbly, with some small butter pieces still visible but no large chunks.
  4. Combine Wet Ingredients: In a separate bowl, whisk together the coconut milk (well shaken and smooth), sugar, eggs, vanilla extract, and lemon zest until well combined.
  5. Form Dough: Pour the wet ingredients into the dry mixture and stir until a sticky dough forms.
  6. Fold in Blueberries: Gently fold the blueberries into the dough, allowing some to slightly squish to release flavor.
  7. Shape Scones: Transfer the dough to a floured surface and shape into a 7-inch diameter round disc. Cut the disc into 8 equal triangular wedges by halving, then halving again, and halving each quarter.
