Ingredients

Wrap and Filling

  • 2 rice paper sheets
  • 4 leaves lettuce
  • ½ cup vermicelli noodles (cooked)
  • ½ cup tofu (cut into strips, baked)
  • ¼ red bell pepper (thinly sliced)
  • ⅓ cup carrots (cut into matchsticks)
  • ⅓ cup red cabbage (thinly sliced)
  • 1 handful fresh herbs (cilantro recommended)

To Serve

  • Peanut sauce (to serve)

Instructions

  1. Prepare the Rice Paper: Fill a large shallow bowl with warm water. Quickly dip each rice paper sheet into the water for a few seconds to soften them. Lay the two softened rice paper sheets side by side on a clean surface, overlapping by about an inch and a half at the center to create a larger wrap.
  2. Layer the Fillings: On the overlapping rice papers, evenly arrange the lettuce leaves first. Then add the cooked vermicelli noodles, baked tofu strips, and the sliced vegetables—red bell pepper, carrots, and red cabbage. Finally, sprinkle the fresh herbs on top for added flavor.
  3. Roll the Spring Roll: Fold all ends of the rice paper inward over the filling to secure everything in place. Then, carefully roll the rice paper over itself starting from the edge closest to you, creating one large, tightly wrapped spring roll. Serve immediately with peanut sauce or your favorite dip.

  • For best texture, soak rice papers just long enough to soften but not become too sticky or tear.
