  1. Clean the berries: Wash the strawberries thoroughly and gently pat them dry with paper towels until completely dry. Ensuring the berries are dry is crucial because moisture will prevent the chocolate coating from sticking properly.
  2. Melt the chocolate: In a microwave-safe bowl, melt the white chocolate and shortening at 50% power. Stir frequently until the mixture is smooth and glossy. Stir in the almond extract for added flavor. Alternatively, you can melt the chocolate using a double boiler on the stovetop to avoid overheating.
  3. Dip each ghost: Holding one strawberry at a time, dip it into the melted white chocolate mixture, ensuring it is fully coated. Allow any excess chocolate to drip back into the bowl. Place the coated strawberries on a waxed paper-lined baking sheet, letting the excess chocolate form a small tail that resembles a ghost’s trailing sheet.
  4. Add the eyes: Immediately place two miniature semisweet chocolate chips onto each coated strawberry to create the ghost’s eyes before the coating sets.
  5. Freeze: Place the baking sheet with the dipped strawberries in the freezer for about 5 minutes or until the white chocolate coating is firm to touch.
  6. Make the mouths: Melt the remaining semisweet chocolate chips in the microwave, stirring until smooth. Dip a toothpick into the melted chocolate and carefully draw mouths onto each ghost strawberry for expressive faces.
