The skewers are basted with a delicious homemade garlic parmesan compound butter with a hint of chili crunch and lemon juice for an irresistible, savory finish. Ingredients

Chicken and Marinade

  • 1 ½2 pounds chicken thighs or tenders, cut into 1-inch pieces
  • 1½ teaspoons seasoning salt (such as Lowry’s)
  • 2 tablespoons mayonnaise
  • 1 tablespoon grated parmesan cheese
  • ½ teaspoon garlic powder

Garlic Parmesan Compound Butter

  • 5 tablespoons softened butter
  • 4 cloves garlic, minced or pressed
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon Parmesan cheese
  • 12 teaspoons chili crunch (or chili crisp)
  • 1 teaspoon lemon juice

Instructions

  1. Season: Add the chicken pieces to a bowl and season them with seasoning salt, mayonnaise, garlic powder, and grated parmesan. Mix thoroughly to coat all pieces evenly. Cover and marinate in the refrigerator for at least 20 minutes, ideally between 4 to 16 hours for maximum flavor absorption.
  2. Prepare Compound Butter: In a separate bowl, combine softened butter, minced garlic, fresh parsley, parmesan cheese, chili crunch, and lemon juice. Use a fork to blend these ingredients into a smooth compound butter. Microwave for about 5 seconds to slightly loosen the butter, making it easier to baste later.
  3. Skewer: Thread the marinated chicken pieces onto metal or soaked wooden skewers. Set the skewers aside while you preheat your air fryer or grill. The recipe recommends air frying at 400ºF for optimal results.
  4. Cook: Once the air fryer is preheated, place 4-7 skewers inside without overcrowding to ensure even cooking. Cook for 6 minutes initially, then flip the skewers and cook for an additional 3 minutes.
