Ingredients

Steak and Butter

  • ¼ cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 ¼ lb sirloin steak, cut into ½ inch cubes

Potatoes and Seasonings

  • 1 lb Yukon gold potatoes, cut into ½ inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste

Instructions

  1. Prep: Begin by cutting the sirloin steak and Yukon gold potatoes into ½ inch cubes and mincing the garlic. This prep ensures even cooking and distributes flavor evenly throughout the dish.
  2. Heat the Skillet: Place a large cast iron skillet over medium heat. Add the olive oil and two tablespoons of the ghee to the pan, allowing them to melt and heat before adding ingredients.
  3. Cook the Potatoes: Once the ghee has melted, add the cubed potatoes to the pan. Sprinkle minced garlic, dried thyme, dried oregano, sea salt, and black pepper over the potatoes. Let them cook undisturbed for 2-3 minutes before stirring. Continue to stir every 1-2 minutes, cooking until the potatoes become golden brown and fork tender, about 8-10 minutes. Avoid overcrowding the pan to ensure crispy potatoes. Once done, remove the potatoes and browned bits from the skillet and set aside.
  4. Sear the Steak: Increase the heat to medium-high and add the remaining two tablespoons of ghee to the skillet. Allow it to melt fully. Add the steak cubes to the pan and season with a dash of salt and pepper. Let them cook for at least 2 minutes undisturbed to develop a good sear, then stir and continue cooking for another 1-2 minutes until the steak is golden brown on all sides.
  5. Combine and Serve: Return the cooked potatoes and any browned bits to the pan with the steak. Stir well to combine all flavors. Adjust seasoning by adding additional salt and pepper if needed. Garnish with freshly chopped parsley for color and freshness. Serve immediately and enjoy your garlic butter steak bites and potatoes.

Notes

  • Using a cast iron skillet helps in achieving a perfect sear and crispy potatoes due to its excellent heat retention.
  • Ensure potatoes are cut uniformly to guarantee even cooking.
  • Do not overcrowd the pan while cooking potatoes or steak to maintain proper browning.
  • For extra flavor, fresh herbs like rosemary or parsley can be added along with the dried herbs.
  • This recipe can be adapted to gluten-free and low carb diets by substituting potatoes with vegetables like cauliflower or turnips.
