  • 3/4 cup + 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup cocoa powder
  • 1 cup vegan chocolate chips (for folding)

Instructions

  1. Preheat and prepare the pan: Preheat your oven to 180°C (350°F) and line an 8 x 8-inch square baking pan with parchment paper to prevent sticking.
  2. Make flax egg: Mix the ground flaxseed with brewed, chilled coffee and let it sit for 10 minutes to thicken into a gel-like consistency, which acts as an egg substitute.
  3. Melt chocolate: Melt 1 cup of your vegan chocolate chips using a microwave-safe bowl or stovetop method, then set aside to cool slightly.
  4. Mix wet ingredients: In a large bowl, whisk together the softened vegan butter and coconut sugar until smooth. Add the flax egg mixture, melted chocolate, and vanilla extract, mixing until the batter is glossy and uniform.
  5. Combine dry ingredients: Sift the all-purpose flour, baking powder, salt, and cocoa powder into the wet mixture, gently folding them in until just combined to avoid overmixing.
  6. Add remaining chocolate: Fold in the remaining 1 cup of vegan chocolate chips to add texture and extra chocolate bursts throughout the brownies.
  7. Bake the brownies: Pour the batter into the prepared pan and bake in the preheated oven for 27 to 30 minutes, until a toothpick inserted near the center comes out with moist crumbs.
