These Frozen Yogurt Granola Cups are a delicious and refreshing treat perfect for a healthy snack or breakfast. Combining the crunch of cinnamon-spiced oats and almond butter with creamy Greek yogurt and fresh berries, these cups are easy to make and set in the freezer for a satisfying chilled dessert or snack.

Ingredients

Granola Base

  • 3/4 cup oats
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter
  • 34 tbsp honey (depending on desired sweetness)
  • 1 tsp vanilla extract

Filling and Topping

  • 1 1/2 cups Greek yogurt (preferably full-fat or 2% for creaminess)
  • Berries of choice to top (such as blueberries, strawberries, raspberries)

Instructions

  1. Prepare Granola Dough: In a mixing bowl, thoroughly combine the oats, cinnamon, almond butter, honey, and vanilla extract until you get a sticky, dough-like consistency. If the mixture appears too dry or crumbly, add a bit more almond butter and honey to reach a moldable texture.
  2. Form Granola Bases: Line a muffin pan with muffin liners to make removal easier. Place a spoonful of the granola dough into the bottom of each muffin cup and press it down firmly with your fingers to create a sturdy base that will hold the yogurt filling.
  3. Add Yogurt and Toppings: Spoon a generous amount of Greek yogurt onto the granola base in each muffin cup. Then, top with fresh berries and sprinkle any remaining granola dough over the top for extra texture and flavor.
  4. Freeze to Set: Place the muffin pan in the freezer and let the granola cups set completely for at least 4 hours. Before serving, allow them to thaw slightly for a creamier texture, approximately 5-10 minutes at room temperature.
