These FroYo Berry Bites are a delightful and refreshing frozen yogurt treat featuring a crunchy almond crust, creamy honey-sweetened Greek yogurt, and topped with fresh berries. Perfect for a healthy dessert or snack, they freeze into bite-sized portions that are easy to enjoy anytime.

Ingredients

Crust Ingredients

  • 1/4 cup crushed almonds (or almond meal)
  • 2 tablespoons coconut sugar (adjust for desired sweetness)
  • 2 tablespoons coconut oil (melted)

Filling Ingredients

  • 3/4 cup low-fat plain Greek yogurt
  • 2 tablespoons honey
  • 1 1/2 cups fresh strawberries and/or raspberries (chopped)

Instructions

  1. Prepare the muffin tin: Line a 6-cup muffin tin with silicone cupcake liners or parchment liners. Alternatively, you can use a nonstick muffin tin directly.
  2. Make the crust: In a small bowl, combine the crushed almonds, coconut sugar, and melted coconut oil. Stir well to evenly distribute the ingredients. Spoon a small amount of this mixture into the bottom of each muffin cup, creating a crust layer.
  3. Prepare the yogurt filling: In a medium bowl, mix together the Greek yogurt and honey until smooth and well combined. Spoon approximately 2 tablespoons of this yogurt mixture over the crust layer in each muffin cup.
  4. Add the berries: Top each cup generously with chopped fresh strawberries, raspberries, or a mix of both, covering the yogurt layer.
  5. Freeze until firm: Place the muffin tin in the freezer and freeze for about 6 hours or until the FroYo bites are fully set and firm.
  6. Serve: When ready to serve, remove the bites from the silicone liners or muffin tin carefully. Allow them to sit at room temperature for 8 to 10 minutes to soften slightly before enjoying.

Notes

  • For a sweeter treat, increase the amount of coconut sugar in the crust mixture.
  • Use silicone liners for easy removal; if using parchment or no liners, be gentle when popping out the bites.
  • These bites can be stored in an airtight container in the freezer for up to one week.
