A refreshing and wholesome breakfast fruit salad featuring a colorful mix of fresh berries, grapes, apple, and banana, tossed in a creamy and subtly sweetened Greek yogurt dressing, topped with crunchy pecans for added texture and flavor. This easy-to-make recipe is perfect for a quick, nutritious start to your day.

Ingredients

Fruit

  • 1 cup Strawberries (washed and cut into bite sized pieces)
  • 1 cup Green Grapes (washed and halved)
  • 1 cup Red Grapes (washed and halved)
  • 1 cup Blueberries (washed)
  • 1 Apple (washed, cored, peeled, and diced)
  • 1 Banana (peeled and sliced)

Yogurt Dressing

  • 1 cup Plain Greek Yogurt
  • 12 tbsp Honey
  • ½ tsp Vanilla Extract
  • ½ tsp Almond Extract

Topping

  • ¼ cup Pecans (chopped)

Instructions

  1. Prepare the fruit: Combine all of the fruit except the banana in a large bowl. If you plan to prepare the salad ahead of time, hold off adding the banana until just before serving to keep it from browning.
  2. Make the dressing: In a small mixing bowl, whisk together the plain Greek yogurt, honey, vanilla extract, and almond extract until smooth and well combined.
  3. Toss the salad: Gently fold the yogurt dressing into the fruit mixture, ensuring all the fruit is evenly coated without bruising or mashing.
  4. Add the banana and topping: Just before serving, add the sliced banana to the fruit salad and sprinkle the chopped pecans evenly on top for a crunchy finish.

Notes

  • Add the banana right before serving to prevent it from browning.
  • Use fresh fruit for best taste and texture; you can substitute or add other seasonal fruits as desired.
  • For a vegan option, substitute Greek yogurt with a plant-based yogurt and use maple syrup instead of honey.
  • Chilling the salad for 10 minutes before serving can enhance the flavors and texture.
  • Increase or decrease honey according to your desired sweetness.
