These Extra Crispy Corn Fritters are a delightful and crunchy appetizer or snack featuring fresh corn kernels mixed into a seasoned batter with Parmesan and herbs. Ingredients

Batter Ingredients

  • 1/4 cup plain/all-purpose flour
  • 1/4 cup cornflour/cornstarch
  • 1/4 tsp baking soda (or 3/4 tsp baking powder)
  • 1 egg
  • 2 tbsp milk (any type)

  • 2 cups fresh corn kernels (roughly from 2 cobs; canned or frozen also fine)
  • 1/2 cup Parmesan, finely grated
  • 3/4 cup green onions, sliced
  • 1/2 cup coriander/cilantro, roughly chopped (can substitute more green onion)

Instructions

  1. Preheat oven: Preheat your oven to 120°C (250°F) and set a wire rack on a baking tray. This will keep the fritters warm and crispy after cooking.
  2. Mix dry ingredients: In a mixing bowl, combine the plain flour, cornflour, and baking soda thoroughly.
  3. Add wet ingredients: Crack in the egg and add the milk. Stir until just incorporated; expect a lumpy and thick batter.
  4. Combine main ingredients: Fold in the fresh corn kernels, finely grated Parmesan, sliced green onions, and chopped coriander until all pieces of corn are well coated with batter.
  5. Heat oil in skillet: Pour enough vegetable oil into a skillet so that it just covers the base. Heat the oil over medium-high heat until shimmering.
  6. Prepare spatula: Lightly spray the underside of a spatula with oil to prevent the batter from sticking when flattening the fritters.
  7. Cook fritters in batch: Using a 1/4 cup measuring cup or an ice cream scooper, place dollops of batter into the hot skillet. Flatten each to about 1 cm thickness. Cook 2 or 3 fritters at a time without overcrowding the pan.
  8. Fry until golden: Cook each side for about 3 minutes per side until deep golden and crisp, flipping carefully to avoid breaking.
  9. Keep warm: Transfer the cooked fritters to the wire rack in the warm oven to keep them crispy and warm while you cook the remaining batches. Add more oil to the skillet as needed.
  10. Serve: Serve the warm, crispy corn fritters with your choice of dipping sauces such as sour cream, ketchup, or avocado sauce.

Notes

  • Frozen or canned corn can be used if fresh corn is not available—just thaw and drain before mixing.
  • To make the fritters extra crispy, ensure oil is hot enough before adding batter, but not so hot that fritters burn before cooking through.
