Ingredients

Dry Ingredients

  • 1¼ cups old-fashioned rolled oats
  • ½ cup vanilla protein powder
  • 1 tbsp ground flaxseed
  • 2 tsp pumpkin pie spice
  • ⅛ tsp salt

Wet Ingredients

  • ⅔ cup creamy peanut butter (or other nut/seed butter)
  • ¼ cup pumpkin puree
  • 3 tbsp pure maple syrup

Add-Ins

  • ¼ cup mini chocolate chips

Instructions

  1. Combine Ingredients: Add all the dry and wet ingredients together in a large mixing bowl and stir thoroughly until you achieve a well-combined, sticky batter.
  2. Shape the Protein Balls: Roll the mixture into 24 equal-sized balls, approximately 1.5 inches in diameter, and arrange them evenly spaced on a baking sheet or tray.
  3. Chill to Set: Refrigerate the balls for at least 1 hour to allow them to firm up and develop flavor. Once set, enjoy immediately or store them in the fridge for up to 7 days.

Notes

  • You can substitute peanut butter with almond butter or sunflower seed butter if preferred.
  • For a vegan option, ensure your protein powder and chocolate chips are dairy-free.
  • These are no-bake protein balls, so refrigeration is essential to help them hold their shape.
  • Use rolled oats for the best texture; quick oats may result in a softer bite.
  • Feel free to add chopped nuts or seeds for extra crunch.
