This Easy Peach Cobbler is a classic, comforting dessert featuring juicy canned peaches baked under a golden buttery crust. With simple pantry ingredients and minimal prep time, it’s perfect for a quick, crowd-pleasing dessert. The sweet and tender peaches meld beautifully with a slightly crisp topping, best served warm with vanilla ice cream.

Dry Ingredients

  • 1 cup self-rising flour (see Note for substitution)
  • 3/4 cup granulated sugar (plus 2 additional tablespoons for topping)

Wet Ingredients

  • 1/2 cup butter, divided and melted separately
  • 1 (29 ounce) can sliced peaches in heavy syrup, undrained

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cobbler.
  2. Mix Flour, Sugar, and Butter: In a medium bowl, coarsely mix together the self-rising flour, 3/4 cup granulated sugar, and 1/4 cup melted butter. You can optionally add a dash of cinnamon at this step to enhance flavor.
  3. Layer Flour Mixture: Sprinkle about one-third of the flour mixture evenly on the bottom of a 9×9 inch baking dish. This will help thicken the peach syrup as it bakes.
  4. Add Peaches: Pour the canned peaches along with their juice over the flour mixture in the dish. If you prefer a drier cobbler, you may pour off some of the juice before adding.
  5. Top with Remaining Ingredients: Sprinkle the remaining flour and sugar mixture evenly over the peaches. Then sprinkle the additional 2 tablespoons of sugar on top. Finally, drizzle the last 1/4 cup of melted butter over the entire top layer. It will look wet, but the flour mixture will absorb the liquid during baking.
  6. Bake the Cobbler: Place the dish in the preheated oven and bake for 40-45 minutes or until the top is golden brown and bubbling.
  7. Cool and Serve: Let the cobbler rest for at least 5 minutes before serving to allow it to set. Serve warm, ideally with a scoop of vanilla ice cream.
  8. Scaling: This recipe can be doubled and baked in a 9×13 inch baking dish for larger servings.

Notes

  • To substitute for self-rising flour, combine 1 cup all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.
  • If you prefer less sweetness, reduce the sugar slightly or drain some syrup from the canned peaches.
  • A dash of cinnamon or nutmeg can be added to the flour mixture for added spice.
