A vibrant and comforting Lemony Butter Bean Stew that is both vegan and gluten-free, packed with colorful peppers, fresh spinach, and a zesty lemon twist. This hearty stew is perfect for a nutritious, flavorful meal that comes together in about 40 minutes using simple stovetop cooking.

Ingredients

Vegetables & Aromatics

  • 2 medium red onions, peeled and thinly sliced
  • 1 red pepper, deseeded and thinly sliced
  • 1 yellow pepper, deseeded and thinly sliced
  • 1 green pepper, deseeded and thinly sliced
  • 4 cloves garlic, finely chopped
  • 5 oz (150 g) fresh spinach (approx. 45 cups)
  • Fresh parsley, to serve

Pantry & Canned Goods

  • 2 tablespoons olive oil
  • 2 tablespoons tomato puree
  • 3 x 14 oz (400 g) tins tomatoes
  • 1 cup (240 ml) vegan stock
  • 2 teaspoons smoked paprika
  • 4 bay leaves
  • 2 x 14 oz (400 g) tins butter beans, drained and rinsed
  • 56 sprigs fresh thyme or 1 teaspoon dried thyme

Seasonings & Extras

  • Grated zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Sauté Onions and Peppers: Heat the olive oil in a large pan over medium heat. Add the sliced onions and fry for 4-5 minutes, stirring regularly until they start to soften. Add the sliced red, yellow, and green peppers, increase the heat slightly to help cook them, then reduce back to medium after a few minutes.
  2. Add Garlic: Once the onions and peppers soften, add the finely chopped garlic and cook for an additional 2-3 minutes, stirring often to prevent burning.
  3. Incorporate Tomatoes and Seasonings: Stir in the tomato puree and canned tomatoes, using a spoon to break apart the tomatoes. Pour in the vegan stock, add smoked paprika and bay leaves. Bring the mixture to a simmer and cook for 5-10 minutes, stirring occasionally to meld the flavors.
  4. Add Butter Beans, Thyme, and Lemon Zest: Mix in the drained butter beans, fresh or dried thyme, and grated lemon zest. Continue to simmer the stew for 10-15 minutes until the flavors develop and the stew thickens slightly.
  5. Wilt Spinach: With about 5 minutes left of cooking, stir in the fresh spinach leaves. They will initially seem bulky but will quickly wilt into the stew as you stir.
  6. Season and Serve: Taste and adjust seasoning with salt and pepper as desired. Serve the stew hot, garnished with chopped fresh parsley. It pairs wonderfully with rice or your choice of grain.

Notes

  • To save time, use pre-chopped peppers if available.
  • For a spicier stew, add a pinch of chili flakes along with the smoked paprika.
  • Ensure to rinse the butter beans to reduce any canned bean aftertaste.
  • Fresh thyme enhances flavor, but dried thyme is a fine alternative.
