A quick and easy gluten-free miso soup recipe that features flavorful broth made with hondashi powder, wakame seaweed, tofu cubes, and miso paste. Perfect for a light appetizer or comforting side dish, this soup is ready in just 8 minutes.

Ingredients

Broth and Soup Base

  • 4 cups water
  • 1 teaspoon hondashi powder
  • ¼ cup wakame seaweed (cut or broken into smaller ½ inch pieces)

Main Ingredients

  • 8 ounces tofu (drained and cut into ½ inch cubes or smaller)
  • 4 tablespoons gluten free miso paste (white, yellow, or red miso; can also use regular miso paste)
  • 1 stalk green onion (thinly sliced, optional)

Instructions

  1. Boil water and add ingredients. Heat the 4 cups of water to a boil in a pot, then add the hondashi powder, wakame seaweed pieces, and tofu cubes to the boiling water.
  2. Simmer the soup. Once the soup reaches a boil again, reduce the heat to a high simmer and let it cook for about 3 minutes or until the wakame seaweed is fully rehydrated and softened.
  3. Dissolve the miso paste. Turn off the heat to avoid boiling the miso, which can diminish its flavor. Using a strainer, dissolve the miso paste into the soup by dipping the paste in hot broth until smooth, or alternatively, scoop a small amount of soup out into a bowl, mix in the miso paste until dissolved, then add it back into the pot and stir gently.
  4. Add green onions and serve. Stir in the thinly sliced green onions, serve the miso soup hot, and enjoy immediately for best flavor and freshness.

Notes

  • Do not boil the soup after adding the miso paste to preserve its delicate flavor and nutrients.
  • Hondashi powder is a Japanese fish-based stock powder that adds umami flavor; it is optional but enhances the soup significantly.
