Marinade

  • zest of 1 large navel orange
  • 2 tablespoons finely sliced fresh mint

  • 2 cloves garlic, grated on a microplane
  • Kosher salt, to taste
  • Fresh cracked black pepper, to taste

Toppings and Serving

  • 1/4 cup chopped pistachios
  • 2 tablespoons honey
  • Sliced baguette or crispy crostini, for serving

Instructions

  1. Slice Goat Cheese: Carefully slice the goat cheese log into 1/3-inch thick slices. Arrange them in a large shallow dish that will also be used for serving.
  2. Make the Marinade: In a bowl, whisk together the olive oil, orange zest, finely sliced fresh mint, fresh thyme leaves, grated garlic, a couple of pinches of kosher salt, and freshly cracked black pepper until well combined.
  3. Marinate: Pour the olive oil and herb mixture evenly over the goat cheese slices. Cover the dish tightly with plastic wrap and refrigerate for at least 1 hour, or up to overnight to allow the flavors to meld.
  4. Finish and Serve: About 30 minutes before serving, remove the marinated goat cheese from the fridge to let the oil come to room temperature.
