Instructions

  1. Combine Ingredients: Add raw cashews, shredded coconut, pitted dates, lemon zest, lemon juice, and 2 tablespoons of water to your food processor.
  2. Process Mixture: Pulse the ingredients until they break down into a sticky, well-combined mixture, adding more water 1 tablespoon at a time if needed to reach the right consistency for shaping.
  3. Form Balls: Using a small cookie scoop or your hands, scoop out the mixture and roll it into bite-sized balls. Place each ball onto a plate, baking sheet, or parchment paper. You should get around 22 balls.
  4. Optional Coating: Roll each bliss ball in additional shredded coconut by placing the coconut in a shallow dish and gently rolling the balls to coat evenly.
