Celebrate Halloween with these fun and easy Jack-o-lantern Cheese Quesadillas, perfect as a festive dinner or snack. Made with simple ingredients like flour tortillas and shredded cheese, these quesadillas feature cute pumpkin face cutouts baked to golden perfection. Ready in just 15 minutes, they are a delightful treat for kids and adults alike.

Ingredients

Quesadilla Ingredients

  • 2 flour tortillas
  • 1 to 1 ½ cups shredded marble cheese or cheddar cheese
  • Sour cream (for serving)
  • Salsa (for serving)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot and ready for baking the quesadillas evenly.
  2. Cut Pumpkin Stem: Stack the two flour tortillas on top of each other and use a sharp kitchen knife to carefully cut out a pumpkin ‘stem’ shape from the tortillas.
  3. Create Pumpkin Face: Separate the tortillas and set one aside. With the other tortilla, cut out a jack-o-lantern face from the center. You can sketch the design first by lightly scratching the tortilla with a toothpick for guidance.
  4. Prepare the Base: Place the plain tortilla (without the face cutout) onto a baking sheet. Spread the shredded cheese evenly over this tortilla, creating a cheesy base layer.
  5. Assemble Quesadilla: Carefully align the tortilla with the pumpkin face over the cheese-covered tortilla, ensuring the pumpkin stems align perfectly for a cohesive design.
  6. Bake: Bake the assembled quesadilla in the preheated oven at 400°F for about 10 minutes, or until the cheese is fully melted and the edges of the tortillas turn golden brown and crispy.
  7. Serve: Remove from the oven and let it cool slightly. Serve warm with sour cream and salsa on the side for dipping, enhancing the festive flavor experience.

Notes

  • You can use any melting cheese such as mozzarella, Monterey Jack, or a Mexican cheese blend for variety.
  • Use a sharp knife or kitchen scissors to cut the tortilla shapes more precisely.
  • Customize the pumpkin face with different expressions to add more fun to your Halloween table.
  • For a crispier quesadilla, you can flip it and toast briefly in a skillet after baking if desired.
  • Serves well as a light dinner or a festive party appetizer.
