This Easy Grapefruit Mocktail, also known as a Paloma Mocktail, is a refreshing and delightful non-alcoholic beverage featuring fresh grapefruit and lime juices, enhanced with a homemade rosemary simple syrup for a unique aromatic twist. Perfect for warm days or as a sophisticated party drink, this mocktail combines the bright tartness of citrus with sparkling water for a bubbly finish.

Ingredients

Rosemary Simple Syrup

  • 2/3 cup sugar
  • 2/3 cup water
  • 23 sprigs fresh rosemary

Mocktail

  • 4 oz. fresh grapefruit juice (about 1/2 cup)
  • 1/2 oz. fresh lime juice (1 tablespoon)
  • 1/2 to 3/4 oz. rosemary simple syrup or agave syrup (1 to 1 1/2 tablespoons)
  • 2 to 4 oz. club soda or sparkling water (1/4 to 1/2 cup)
  • Ice cubes, as needed
  • Fresh rosemary sprigs, grapefruit slices, lime wedges, or sugar/salt rim for garnish

Instructions

  1. Start By Making The Rosemary Simple Syrup: First, thoroughly wash the fresh rosemary sprigs under cool water, keeping them whole if possible. In a small saucepan over medium heat, combine the sugar and water and stir until the sugar dissolves completely. You may bring the mixture to a simmer but avoid boiling.
  2. Steep The Rosemary: Once the sugar is fully dissolved and the mixture is steaming or simmering, add the rosemary sprigs and immediately turn off the heat. Let the syrup steep for at least 10 to 20 minutes, or up to an hour if you prefer a stronger rosemary flavor.
  3. Strain, Store & Serve: After steeping, strain the syrup through a fine mesh sieve to remove the rosemary sprigs. Store the rosemary simple syrup in a glass jar or airtight container in the refrigerator where it will keep for up to two weeks. This syrup makes enough for multiple drinks.
  4. Prepare Your Glass: Fill your serving glass with ice cubes to chill the drink effectively.
  5. Mix The Juice And Syrup: Add fresh grapefruit juice, lime juice, and rosemary simple syrup (or agave syrup if preferred) into the glass. Stir well to combine these ingredients without adding the sparkling water to preserve its fizz. Alternatively, you can use a cocktail shaker to mix.
