Ingredients

Sliders

  • 3 tablespoons unsalted butter
  • 1 medium onion, thinly sliced
  • 2 teaspoons fresh thyme, minced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 12 sweet rolls
  • 10 slices provolone cheese
  • 14 ounces sliced deli roast beef

Butter Glaze

  • 1/2 cup unsalted butter, melted
  • 1 1/2 tablespoons dried onion soup mix

Au Jus

  • 1 packet au jus gravy mix
  • 3 cups water

Optional Garnish

  • Fresh chopped parsley

Instructions

  1. Caramelize the Onions: In a large skillet over medium heat, melt 3 tablespoons of unsalted butter. Add the thinly sliced onions and coat them in the butter. Cook, stirring occasionally, for 12 to 15 minutes until the onions are soft, browned, and caramelized but not burnt.
  2. Season the Onions: Add 2 teaspoons fresh thyme, 1/4 teaspoon kosher salt, and 1/4 teaspoon black pepper to the caramelized onions. Stir well to combine, then remove from heat and set aside.
  3. Slice and Prep Rolls: Preheat the oven to 350°F (175°C). Slice the 12 sweet rolls horizontally to separate the tops and bottoms, keeping each set intact. Arrange the bottom halves, cut side up, in an 11×7-inch baking dish.
  4. Layer Cheese and Beef: Place half of the 10 slices of provolone cheese over the roll bottoms. Add the 14 ounces of sliced deli roast beef on top of the cheese, then spread the caramelized onions evenly over the beef. Layer the remaining provolone slices on top, then cover with the roll tops.
  5. Brush the Butter Glaze: In a small bowl, mix together 1/2 cup melted unsalted butter and 1 1/2 tablespoons dried onion soup mix. Brush or pour this butter mixture evenly over the tops of the rolls to coat completely.
  6. Bake Covered then Crisp: Cover the baking dish loosely with foil, ensuring the foil does not touch the rolls. Bake for 25 minutes, then remove the foil and bake an additional 5 minutes to brown and crisp the tops.
  7. Make Au Jus and Serve: While the sliders are baking, prepare the au jus gravy by mixing the packet with 3 cups of water according to package directions. Serve the warm sliders garnished with fresh chopped parsley if desired, alongside small bowls of au jus for dipping.

Notes

  • Use sweet rolls to balance the savory flavors and add a soft texture to the sliders.
  • Caramelizing the onions slowly is key for deep flavor—don’t rush this step.
  • The onion soup mix in the butter glaze adds an extra layer of savory taste and a nice crust on the rolls.
  • Au jus dipping sauce enhances the overall flavor and moistness of the sliders; make sure it’s warm for serving.
  • These sliders can be assembled ahead of time and baked just before serving for convenience.
  • Optionally, garnish with fresh chopped parsley to add a pop of color and freshness.
