  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Prepare the pan: Line an 8×8 inch (20×20 cm) pan with parchment paper, leaving an overhang around the edges for easy removal of the fudge later.
  2. Chop the white chocolate: Finely chop the white chocolate into very small pieces and set aside to be incorporated smoothly in the mixture.
  3. Combine ingredients in saucepan: In a medium saucepan, add unsalted butter, packed brown sugar, sweetened condensed milk, and golden syrup (or corn syrup). Place over low heat.
  4. Melt ingredients: Gently stir the mixture over low heat until everything is melted and well combined, ensuring the sugar dissolves completely.
  5. Cook mixture: Keep the burner on low heat and bring the mixture to a very low boil for 5 minutes while stirring gently. Small bubbles should appear on the surface, indicating it’s cooking properly.
  6. Add white chocolate: Once no streaks of butter remain visible even after stopping stirring, remove the saucepan from heat and immediately stir in the chopped white chocolate until fully melted and smooth.
  7. Flavor the fudge: Stir in the vanilla extract and salt to enhance the caramel flavor and balance the sweetness.
  8. Set the fudge: Pour the fudge mixture into the prepared parchment-lined pan, spreading the top evenly. Refrigerate for about 4 hours until firm and set.
