  • 1 tablespoon soy sauce (or tamari if gluten-free)
  • 1 tablespoon agave syrup (or maple syrup)
  • Salt to taste
  • 6 small flour or corn tortillas

Instructions

  1. Prepare the tofu: Drain the tofu and press it gently to remove any excess water for better texture. Using the large side of a block grater, grate the tofu into shreds, including some crumbly bits—this helps create texture in the tacos.
  2. Sauté vegetables: Heat 1 tablespoon of cooking oil in a large frying pan over medium heat. Add the thinly sliced onion and green bell pepper, season lightly with salt, and gently fry for 2-3 minutes until they begin to soften.
  3. Cook the tofu shreds: Add the grated tofu shreds to the pan along with the remaining 1 tablespoon of oil. Stir well and increase the heat to develop some crispness in the tofu. Fry for 6-8 minutes, stirring regularly, until the tofu starts turning light golden brown and crispy. Adjust heat as needed to prevent burning.
  4. Add flavorings: Lower the heat and stir in tomato paste, Cajun seasoning, soy sauce (or tamari), and agave syrup. Add a few tablespoons of water to loosen the mixture, then mix thoroughly and cook for another 2 minutes to meld the flavors and slightly reduce the sauce.
  5. Finish and serve: After cooking, the mixture should be sticky and fairly dry with deliciously flavored tofu shreds. Serve hot in warmed flour or corn tortillas with your favorite taco toppings such as avocado, salsa, or fresh cilantro.
