Ingredients

Meat and Vegetables

  • 1 Tablespoon olive oil
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup sweet onion, chopped
  • 1 pound lean ground beef

Beans and Vegetables Mix

  • 1/2 cup salsa
  • 15 ounce can black beans, rinsed and drained
  • 1 cup corn (preferably frozen fire roasted)
  • 14.5 ounce can diced tomatoes
  • 4 ounce can diced green chiles

Rice and Seasoning

  • 1 cup jasmine rice, rinsed
  • 1 Tablespoon taco seasoning
  • 1/2 teaspoon chili powder (use 12 tsp for more spice)
  • 2 cups chicken broth

Toppings

  • 1 cup shredded cheddar/jack cheese
  • Salt and pepper to taste

Instructions

  1. Sauté Vegetables and Beef: In a large pan, heat the olive oil over medium heat. Add the chopped onions and red bell peppers and sauté until softened. Add the lean ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease and season with salt and pepper to taste.
  2. Add Remaining Ingredients: Stir in the salsa, black beans, corn, diced tomatoes, diced green chiles, and rinsed jasmine rice. Sprinkle in the taco seasoning and chili powder. Pour in the chicken broth and stir everything together.
  3. Cook the Mixture: Bring the mixture to a light boil over medium-high heat. Once boiling, cover the pan with a lid and reduce the heat to low. Let it simmer covered for about 15 minutes, or until the rice is fully cooked and has absorbed the liquid.
  4. Finish with Cheese: After cooking, stir the mixture gently and adjust seasoning if needed. Sprinkle the shredded cheddar/jack cheese over the top. Cover the pot again and let it rest for 5 minutes to allow the cheese to melt completely.
  5. Serve and Enjoy: Spoon the burrito bowl mixture into individual bowls. Serve over a bed of lettuce if desired and accompany with tortilla chips or your favorite toppings such as sour cream, guacamole, or fresh cilantro. Leftovers can be rolled up in tortillas for an easy next-day meal.
