Ingredients

Shrimp and Garnish

  • 1 pound jumbo shrimp, peeled and deveined
  • 1 lime, juiced
  • 2 tablespoons fresh cilantro, chopped, for garnish

Seasoning Mix

  • 2 tablespoons brown sugar
  • 1 teaspoon black pepper
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons paprika
  • 1 tablespoon garlic salt
  • 1 tablespoon onion powder

Oils

  • 1 tablespoon olive oil (for shrimp coating)
  • 1 tablespoon olive oil (for cooking)

Instructions

  1. Prepare the seasoning. In a small mixing bowl, combine brown sugar, black pepper, dried oregano, dried thyme, cayenne pepper, paprika, garlic salt, and onion powder. Mix thoroughly to ensure an even spice blend.
  2. Season the shrimp. In a large mixing bowl, toss the peeled and deveined shrimp with 1 tablespoon olive oil until they are evenly coated. Sprinkle the blackened seasoning over the shrimp and mix well to fully coat all pieces with the spice blend.
  3. Heat the pan. Place a cast iron skillet or non-stick pan over medium-high heat and add 1 tablespoon of olive oil. Allow the oil to heat until it is shimmering and the pan is hot, perfect for searing.
  4. Cook the shrimp. Arrange the seasoned shrimp in a single layer without overlapping on the hot skillet. Cook for 3 to 4 minutes on one side until the shrimp start to turn opaque and develop a crust. Flip the shrimp and cook for an additional 2 to 3 minutes until fully cooked and opaque throughout.
  5. Serve and garnish. Transfer the cooked shrimp to a serving plate. Drizzle with fresh lime juice and sprinkle with chopped cilantro. Serve warm as a main dish alongside roasted vegetables, as a filling for shrimp tacos, or in rice bowls for a complete meal.

Notes

  • Use a cast iron skillet for best searing results and flavor development.
  • Do not overcrowd the pan to ensure shrimp cook evenly and develop a nice crust.
  • Adjust cayenne pepper quantity according to your preferred spice level.
  • For garlic powder substitution, add a pinch of salt separately since garlic salt is used here.
  • Shrimp cook quickly—avoid overcooking to maintain tenderness.
