This Easy Baked Oatmeal recipe is a warm and comforting breakfast option that’s both nutritious and simple to prepare. Made with rolled oats, ripe bananas, pecans, and a touch of cinnamon, it’s naturally sweetened with maple syrup and baked to a golden perfection. Perfect for meal prepping or a cozy morning treat, this dish offers a hearty combination of fiber, protein, and healthy fats.

Ingredients

Main Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 2 cups milk of choice (e.g., unsweetened vanilla almond milk)
  • ¼ cup maple syrup
  • 1 large egg
  • 1 Tablespoon melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 ripe bananas (sliced or substitute with ½ cup unsweetened applesauce)
  • 1½ cups chopped pecans (divided) or your choice of mix-ins (nuts, fruit, chocolate)

Instructions

  1. Prep: Preheat the oven to 375°F (190°C) and lightly grease or spray an 8×8 inch square baking dish with cooking spray.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and sea salt. Stir well to evenly distribute the dry ingredients.
  3. Add Wet Ingredients: Add the milk, maple syrup, egg, melted coconut oil, vanilla extract, and bananas (sliced or applesauce) to the dry mixture. Stir until all ingredients are thoroughly combined.
  4. Incorporate Pecans: Stir in 1 cup of the chopped pecans or your preferred mix-ins, ensuring they are evenly mixed throughout the oatmeal batter.
  5. Pour into Baking Dish: Carefully transfer the oatmeal mixture into the prepared baking dish, spreading it out evenly.
  6. Add Topping: Scatter the remaining ½ cup of chopped pecans evenly across the top of the oatmeal mixture for added texture and flavor.
  7. Bake: Place the baking dish in the preheated oven and bake for 35 to 40 minutes, or until the top is golden brown and the oatmeal has set.
  8. Cool and Serve: Remove from the oven and allow to cool for a few minutes. Portion the baked oatmeal, optionally drizzle with extra maple syrup, and serve warm.

Notes

  • You can substitute bananas with unsweetened applesauce for a different flavor and texture.
  • Feel free to customize the mix-ins by using a variety of nuts, dried fruit, or chocolate chips.
  • Leftovers can be refrigerated for up to 4 days and reheated before serving.
  • For a vegan version, substitute the egg with a flax or chia egg and use plant-based milk.
  • Ensure not to overbake to keep the oatmeal moist and tender.
