This Crock Pot Sweet Potato Casserole is a comforting and easy-to-make dish featuring tender sweet potatoes cooked to perfection in a slow cooker, topped with a buttery pecan streusel crumb topping. Perfect for holidays or a cozy family dinner, it combines the natural sweetness of sweet potatoes with rich flavors of cinnamon, maple syrup, and vanilla, all prepared with minimal effort.

Ingredients

Sweet Potato Mixture

  • 4 pounds sweet potatoes, peeled and cut into 1 inch pieces
  • 1/2 cup melted butter
  • 1/2 cup packed brown sugar
  • 1/4 cup maple syrup
  • 1 1/4 teaspoons cinnamon
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup water
  • 2 eggs, lightly beaten
  • cooking spray

Streusel Topping

  • 3/4 cup packed brown sugar
  • 1/2 cup flour
  • 6 tablespoons melted butter
  • 1 cup chopped pecans

Instructions

  1. Prepare the Crock Pot: Spray the inside of a 6-quart crock pot with cooking spray to prevent sticking and facilitate easy cleanup.
  2. Combine Sweet Potato Ingredients: Place the peeled and cut sweet potatoes, melted butter, 1/2 cup brown sugar, maple syrup, cinnamon, vanilla extract, and water into the crock pot. Stir thoroughly to evenly distribute all ingredients.
  3. Cook Sweet Potatoes: Cover the crock pot and cook on high heat for 3-4 hours, or until the sweet potatoes are tender and easily pierced with a fork.
  4. Mix in Eggs and Mash: Uncover the crock pot and allow the sweet potato mixture to cool slightly. Add the lightly beaten eggs, then use a hand mixer or potato masher to mash and blend the mixture until smooth and creamy.
  5. Make the Streusel Topping: In a separate bowl, combine 3/4 cup brown sugar, flour, melted butter, and chopped pecans. Mix until coarse crumbs form to create the topping.
  6. Add Topping and Cook Further: Sprinkle the streusel topping evenly over the mashed sweet potatoes. Cover again and cook on high for an additional 2 hours to set the topping and meld flavors.
  7. Serve: After cooking, let the casserole stand uncovered for 5 minutes to slightly cool and set before serving. Enjoy warm.

Notes

  • For best results, ensure the sweet potatoes are cut evenly for uniform cooking.
  • You can substitute pecans with walnuts or leave nuts out for a nut-free version.
  • Maple syrup adds a rich sweetness, but honey or molasses can be alternatives.
  • This casserole can be prepared a day ahead; refrigerate and reheat before serving.
  • If you prefer a crunchier topping, briefly broil under an oven after slow cooking to crisp the streusel.
