Crispy Oven Roasted Baby Potatoes are perfectly seasoned mini potatoes roasted to golden perfection with fresh herbs and garlic. These tender yet crispy potatoes make a delicious and easy side dish, featuring a double baking method to ensure a crispy outside and a soft interior.

  • 1 lb mini potatoes

Herbs and Seasoning

  • 1 teaspoon fresh rosemary, finely chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme, finely chopped
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Other

  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven. Set your oven to 365°F (185°C) to begin warming it up for the initial roasting phase.
  2. Season the potatoes. In a medium mixing bowl, toss the mini potatoes with olive oil, minced garlic, finely chopped rosemary, thyme, parsley, and salt and pepper. Make sure the potatoes are evenly coated with the seasoning.
  3. First roast with foil. Transfer the seasoned potatoes to an 8 to 10-inch baking dish and cover loosely with foil. Bake at 365°F for 30 to 40 minutes, allowing the potatoes to cook through and absorb the herb flavors.
  4. Toss and increase temperature. Remove the potatoes from the oven, toss them gently with a wooden spoon to redistribute the flavors, and discard the foil. Increase oven temperature to 450°F (230°C).
  5. Final crisp roast. Place the uncovered baking dish back into the oven and roast for an additional 10 to 15 minutes, or until the potatoes develop a golden, crispy exterior and are tender when poked with a fork. Watch carefully to avoid burning as cooking times may vary depending on potato size.
  6. Garnish and serve. Once roasted perfectly, garnish the potatoes with additional fresh chopped parsley and serve hot as a flavorful side dish.
