These Crispy Ground Beef Tacos are a delicious and easy-to-make weeknight meal. With seasoned ground beef, melty Oaxaca cheese, and crispy corn tortillas, they are perfect for dipping into salsa, queso, or guacamole. Ingredients

Ground Beef Mixture

  • 1 pound lean ground beef (90% lean)
  • 1 packet taco seasoning
  • ¾ cup red enchilada sauce

Tacos

  • 2 ½ cups Oaxaca cheese or Mexican cheese or Monterey Jack, shredded
  • 10 corn tortillas
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven: Set your oven to 450°F (232°C) and allow it to fully preheat to ensure the tacos crisp up nicely while baking.
  2. Cook the ground beef: Heat a skillet over medium-high heat and add the lean ground beef. Brown it thoroughly, breaking it up with a spatula as it cooks. Once cooked, stir in the taco seasoning packet and red enchilada sauce, then simmer briefly before removing from heat.
  3. Warm the tortillas: Wrap the corn tortillas in a damp paper towel and microwave them for 30 to 60 seconds until they become flexible and pliable, preventing cracking during folding.
  4. Prepare the tortillas: Using a brush, coat one side of each tortilla with olive oil. Place each tortilla oil-side down on a baking sheet. On half of the tortilla, layer 2 tablespoons of shredded cheese, then ¼ cup of the cooked beef mixture, followed by 2 more tablespoons of cheese. Fold the tortilla over to enclose the filling.
  5. Arrange and bake: Repeat the assembly process for all tortillas and place the folded tacos in a single layer on the baking sheet. Bake them in the preheated oven for 16 minutes, until the tortillas are crisp and the cheese inside has melted perfectly.
  6. Cool and serve: Remove the tacos from the oven and allow them to cool for about 3 minutes before serving. This resting time helps the cheese set slightly and makes handling easier.
