Green Beans

  • lbs. green beans

Seasoning & Toppings

  • 1 Tbsp avocado oil (or olive oil)
  • 6 garlic cloves, minced
  • ¼ cup shredded parmesan
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • Lemon, to squeeze over the top (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking pan with parchment paper. Depending on the amount of beans, you might need two pans.
  2. Prepare the Green Beans: Trim both ends off the green beans by snapping them off with your hands or cutting with a knife. Place the trimmed beans into a large bowl.
  3. Toss Ingredients: Add the avocado or olive oil, minced garlic, shredded parmesan, salt, and black pepper to the bowl with the green beans. Toss everything thoroughly to ensure the beans are evenly coated with the mixture.
  4. Roast the Beans: Spread the coated green beans in a single layer on the prepared baking pan. It’s okay if some beans overlap slightly. Roast in the oven for 15–20 minutes, or until the beans are tender with crispy edges. Check at 10-12 minutes to monitor roasting progress, especially if using multiple pans.
  5. Serve: Remove from the oven and, if desired, squeeze fresh lemon juice over the roasted green beans. Serve immediately while hot and crispy.
