Crispy Beef Tacos are a delicious and easy-to-make dish featuring seasoned ground beef mixed with cheddar cheese, nestled in corn tortillas and baked until golden and crunchy. Perfect for a satisfying dinner or game day snack, these tacos are bursting with flavor and texture.

Ingredients

Beef Mixture

  • 2 lbs lean ground beef
  • ½ onion, diced
  • 1 packet taco seasoning (~1 oz)
  • 15 oz Rotel (tomatoes and green chilis), drained
  • 4 cups cheddar cheese, shredded (divided)

Tortillas

  • 20 corn tortillas
  • Cooking oil (for sautéing and brushing)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F to prepare for baking the tacos.
  2. Sauté Onions: Heat a deep-sided skillet over medium heat, drizzle with cooking oil, and sauté the diced onions for a couple of minutes until softened.
  3. Cook Ground Beef: Add the ground beef to the skillet, breaking it into small pieces as it cooks. Cook until browned and no longer pink inside.
  4. Drain Excess Grease: Once cooked, carefully drain any excess grease from the beef to keep the tacos flavorful but not greasy.
  5. Add Seasonings and Cheese: Stir in the taco seasoning and drained Rotel tomatoes and green chilis. Then add 1 cup of shredded cheddar cheese and stir until the cheese is completely melted into the beef mixture. Remove from heat.
  6. Warm Tortillas: Working in batches, cover the corn tortillas with a damp paper towel and microwave for 30 seconds to make them pliable and easy to fold.
  7. Prepare Tacos: Brush one side of each tortilla with cooking oil, then flip it. Place a spoonful of the beef mixture with shredded cheese on one side of the tortilla, then fold it over to form a taco. Repeat until your baking sheet(s) are filled, which should yield about 20 tacos.
  8. Bake: Arrange the tacos on a half sheet pan (or two if needed). Bake in the preheated oven for 10-12 minutes, or until the tortillas are crispy and golden.
  9. Serve: Remove the tacos from the oven and enjoy them hot with your favorite toppings or sides.

Notes

  • Draining the excess grease from the beef ensures the tacos aren’t greasy but still flavorful.
  • Heating the tortillas before folding makes them easier to work with and prevents cracking.
  • If you want spicier tacos, use a hot variety of Rotel or add jalapeños.
