  • 2 Honeycrisp or Gala or Sweet Tango apples, sliced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice

Soup Base and Seasonings

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon unsalted butter
  • 3 garlic cloves, minced
  • 4 cups vegetable stock, organic (divided)
  • 1 tablespoon raw honey or maple syrup
  • 4 tablespoons organic all-purpose flour
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground allspice
  • 2 cups organic pumpkin puree (NOT pie filling)
  • 1 cup organic heavy cream
  • 1 cup freshly-grated parmesan cheese

Serving

  • Homemade croutons

Instructions

  1. Preheat Oven and Prepare Apples: Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper or foil for easy cleanup.
  2. Roast the Apples: Arrange the sliced apples on the prepared baking sheet, drizzle with 2 tablespoons of olive oil, and sprinkle with cinnamon, nutmeg, and allspice. Bake for 15-20 minutes until the apples are tender and golden. Remove from the oven and let them cool slightly.
  3. Prepare Homemade Croutons: Make homemade croutons according to your favorite recipe or the suggested method. Using brioche bread can add an extra layer of flavor interest.
  4. Sauté Garlic and Blend Base: In a medium-sized Dutch oven over medium-high heat, warm 1 tablespoon olive oil. Add the minced garlic and sauté for 1-2 minutes until fragrant. Transfer the garlic to a high-powered blender with the roasted apples and 2 cups of vegetable stock; blend until completely smooth.
  5. Create the Roux and Seasonings: Return the Dutch oven to medium-high heat and melt the unsalted butter. Stir in the all-purpose flour, sea salt, black pepper, smoked paprika, garlic powder, oregano, basil, thyme, cinnamon, and allspice, mixing well to combine.
  6. Add Remaining Stock and Thicken: Gradually whisk in the remaining 2 cups of vegetable stock, cooking until the mixture thickens into a smooth, lump-free base.
  7. Combine Soup Ingredients: Stir in the blended apple mixture, heavy cream, honey or maple syrup, and pumpkin puree. Continue whisking until everything is thoroughly combined, and the soup begins to thicken.
  8. Simmer the Soup: Bring the soup to a gentle boil for 1-2 minutes, then reduce the heat to low. Let it simmer for 5-6 minutes to develop flavor and further thicken the texture.
  9. Add Parmesan Cheese: Stir in the freshly grated parmesan cheese, allowing it to melt completely and enrich the soup’s creaminess.
  10. Serve and Garnish: Remove the soup from heat and ladle into bowls. Top with homemade croutons for a crunchy contrast, and serve immediately. Enjoy your warm, comforting soup!

Notes

  • Use organic ingredients wherever possible for the best flavor and health benefits.
  • Do not use pumpkin pie filling; it will alter the flavor and texture negatively.
  • Adjust the amount of honey or maple syrup depending on your preferred sweetness level.
  • For a vegan version, substitute butter with vegan margarine, heavy cream with coconut cream, and parmesan with vegan cheese.
  • Homemade croutons can be made ahead and stored in an airtight container for up to 3 days.
  • Make sure to blend the roasted apples and garlic well to avoid any chunky texture in the soup base.
  • When adding spices to the roux, ensure even mixing to prevent clumping and uneven seasoning.
