Sauce

  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Cook the Pasta: Prepare the pasta according to the package directions, cooking 1-2 minutes less than the recommended time to keep it slightly al dente. Drain and set aside.
  2. Toast the Breadcrumbs: In a small pan, melt 2 tablespoons of butter over medium-low heat. Add the panko breadcrumbs and stir gently until they become golden brown, about 3-5 minutes. Transfer to a separate bowl to prevent burning and set aside.
  3. Make the Roux: In a large saucepan, melt 2 tablespoons unsalted butter over medium heat. Once melted, add the flour and stir continuously to combine and cook for 1 minute to remove the raw flour taste.
  4. Add the Liquid: Slowly whisk in the half and half, ensuring there are no lumps as the sauce begins to thicken.
  5. Add Pumpkin and Spices: Stir in the pumpkin puree, kosher salt, nutmeg, and cayenne pepper. Continue cooking over medium heat until the sauce thickens, about 5 minutes.
  6. Add Cheese and Sage: Remove from heat briefly, then add shredded cheddar, gouda, and fresh sage. Stir until the cheese fully melts into the sauce, creating a smooth and creamy texture.
