This creamy Garlic Parmesan Chicken recipe is a flavorful, low-carb dinner option made simple with just a few ingredients. Tender chicken breasts are baked under a rich, garlicky Parmesan and mayonnaise sauce, resulting in a creamy, cheesy dish perfect for an easy weeknight meal.

Ingredients

Chicken

  • 1 lb boneless, skinless chicken breasts, thinly sliced

Sauce

  • ¾ cup mayonnaise
  • 1 ½ cup shredded Parmesan cheese, divided
  • 2 garlic cloves, minced
  • 1 ½ teaspoons garlic salt or seasoned salt
  • 1 teaspoon freshly cracked pepper

Garnish

  • Chopped parsley, optional

Instructions

  1. Preheat oven and prepare dish: Preheat your oven to 375°F and grease a 9×13 inch casserole or baking dish to prevent sticking.
  2. Arrange chicken: Place the thinly sliced chicken breasts in an even layer inside the greased dish, ensuring they are spread out uniformly.
  3. Make sauce: In a small bowl, whisk together the mayonnaise, ½ cup of shredded Parmesan cheese, minced garlic, garlic salt, and freshly cracked pepper until well combined.
  4. Coat chicken: Spread the mayonnaise and Parmesan mixture evenly over the top of the chicken breasts in the baking dish.
  5. Add cheese topping: Sprinkle the remaining 1 cup of Parmesan cheese evenly over the sauce-coated chicken for a crispy, cheesy crust.
  6. Bake: Place the baking dish in the oven and bake for 40 minutes, or until the internal temperature of the chicken reaches 165°F as measured with an instant-read meat thermometer.
  7. Garnish and serve: Once cooked, remove from oven and optionally garnish with chopped parsley before serving hot.

Notes

  • Storage: Transfer cooled leftovers to an airtight container and refrigerate for up to 3 days. Reheat gently in the microwave until warmed through.
  • Freezing leftovers: Leftovers freeze well for up to 3 months but note the cheese topping will lose crispness after thawing. For best results, thaw overnight in the refrigerator before reheating.
  • Freezing uncooked for meal prep: Assemble the chicken in a freezer-safe container, wrap tightly with plastic wrap, then cover with aluminum foil. Freeze for up to 3 months. Thaw overnight in the fridge before baking as directed or bake from frozen by adding 15 to 20 minutes to baking time until internal temp reaches 165°F.
