Ingredients

Chicken

  • 2 large boneless skinless chicken breasts
  • Salt & pepper (to taste)
  • Flour (for dredging)
  • 1 tablespoon olive oil
  • 2 tablespoons butter (divided)

Garlic Cream Sauce

  • 1 whole head garlic (cloves peeled)
  • 1/2 cup chicken broth or stock
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1 cup heavy/whipping cream
  • Parsley (chopped, optional)

Instructions

  1. Prepare the chicken: Cut each chicken breast in half lengthwise to create 4 thinner cutlets. Season them generously with salt and pepper, then dredge each piece in flour to lightly coat.
  2. Sauté the chicken: Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Once hot, add the chicken cutlets and cook for 4-5 minutes per side until golden brown. Remove the chicken and set aside.
  3. Cook the garlic: Reduce heat to medium or medium-low if using cast iron. Add the remaining tablespoon of butter to the pan and allow it to melt. Add the peeled garlic cloves, cooking for 3-4 minutes while stirring often, until they become lightly browned and fragrant.
  4. Deglaze and reduce: Pour in the chicken broth, add lemon juice and garlic powder. Allow the mixture to bubble and simmer for about 4 minutes, stirring occasionally, until the liquid has reduced noticeably.
  5. Finish the sauce and chicken: Stir in the heavy cream and return the chicken cutlets to the pan. Let everything cook together for another 5 minutes or until the sauce thickens and the chicken is cooked through. Garnish with chopped parsley if desired and serve warm.
