Ingredients

Acorn Squash

  • 1 Acorn Squash

Dairy

  • 1 Tablespoon Butter
  • 1 Tablespoon Cream Cheese
  • 1/2 Cup Heavy Cream (Half & Half can be substituted)
  • 1/4 Cup Parmesan (Grated)

Herbs & Spices

  • 46 Fresh Thyme Sprigs
  • 2 Fresh Rosemary Sprigs
  • 2 Fresh Sage Leaves
  • 1 Pinch Salt
  • 1 Pinch Pepper

Toppings

  • Pumpkin Seeds (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the acorn squash.
  2. Prepare Squash: Wash and cut the acorn squash in half, then scoop out and discard the seeds using a spoon.
  3. First Bake: Place the acorn squash halves cut side down in a baking dish that contains 1 inch of water. Bake for 25-30 minutes or until the squash is tender and easily pierced with a fork. Depending on thickness, this may take up to 45 minutes.
  4. Drain and Reposition: Remove the baking dish carefully from the oven and drain the water. Place the acorn squash halves back into the pan cut side up. If the squash does not sit flat, trim a thin slice off the bottom to stabilize.
  5. Add Creamy Ingredients and Herbs: Divide the butter, cream cheese, and heavy cream evenly between the two squash halves. Top each with fresh thyme sprigs, rosemary sprigs, and sage leaves.
  6. Second Bake: Bake the squash halves for 5-10 minutes until the creamy mixture is bubbly and heated through.
  7. Mix and Add Cheese: Remove the fresh herbs, stir the creamy mix into the squash flesh, then sprinkle Parmesan cheese and season with salt and pepper over the top.
  8. Final Bake: Bake for another 5 minutes until the cheese is melted and bubbly.
  9. Garnish and Serve: Remove from oven, top with pumpkin seeds and some fresh herbs, and serve immediately while warm.

Notes

  • The acorn squash is done when a fork easily pierces the flesh; bake longer if needed up to 45 minutes depending on squash thickness.
  • If the acorn squash does not sit flat in the pan, slice a thin layer off the bottom to create a stable surface for baking.
