Cranberry Honey Butter is a delightful sweet and tangy spread that blends creamy unsalted butter with whole-berry cranberry sauce and honey. This festive butter adds a burst of tartness balanced by natural sweetness, perfect for enhancing rolls, biscuits, pancakes, waffles, or pastries. Its creamy texture and vibrant flavor make it a simple yet elegant condiment to brighten up any meal or holiday table.

Ingredients

Ingredients

  • 1 cup (2 sticks / 227 g) unsalted butter, room temperature
  • ¼ cup (69 g) whole berry cranberry sauce
  • 2 tablespoons honey
  • 1 pinch kosher salt

Instructions

  1. Cream the Butter: In the bowl of a stand mixer fitted with the paddle attachment, cream the room temperature unsalted butter on medium speed until smooth and uniform, about 1-2 minutes.
  2. Whip the Butter: Increase the mixer speed to high and whip the butter for 5-7 minutes, periodically scraping down the sides of the bowl as needed, until it becomes airy and noticeably lighter in color.
  3. Add Flavorings: Lower the mixer speed to low and add the whole berry cranberry sauce, honey, and a pinch of kosher salt. Mix until thoroughly combined, about 1 minute, ensuring an even distribution of flavors.
  4. Serve: Serve the cranberry honey butter immediately spread over pastries, pancakes, biscuits, or waffles to enjoy its fresh and vibrant taste.
  5. Optional – Shape into a Log: For a more decorative presentation, scoop the cranberry honey butter onto a piece of plastic wrap. Roll it into a log shape, pressing and shaping evenly, then twist the ends of the plastic wrap to seal. Refrigerate for at least 2 hours or overnight until firm before slicing and serving.

Notes

  • Use unsalted butter at room temperature for easier whipping and better control of saltiness.
  • Whole berry cranberry sauce provides texture and tart bursts, but smooth cranberry sauce can be substituted if preferred.
  • Honey can be adjusted to taste to increase or decrease sweetness.
  • Make ahead by shaping into a log and refrigerating; allow it to soften slightly before spreading.
  • Perfect accompaniment for holiday breads, breakfast spreads, and cheese boards.
