Ingredients

Chicken

  • 2 large boneless, skinless chicken breasts (about 1 to 1 ½ pounds total)
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Sauce

  • 1 cup (139 g) whole berry cranberry sauce (homemade or store-bought)
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 2 teaspoons balsamic vinegar
  • ½ cup (120 g) chicken broth

Topping

  • ¼ cup (38 g) crumbled feta cheese, plus more for serving
  • 1 tablespoon fresh rosemary, finely chopped

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the chicken later.
  2. Slice Chicken Breasts: Place each chicken breast on a cutting board and carefully slice it horizontally into two thinner cutlets, resulting in a total of 4 pieces.
  3. Pat Dry and Season: Pat the chicken pieces dry with paper towels to ensure a good sear, then evenly season both sides with paprika, garlic powder, kosher salt, and black pepper.
  4. Sear Chicken: Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the seasoned chicken breasts and sear for 2-3 minutes on each side until golden brown. The chicken won’t be fully cooked yet as it will finish baking in the oven. Remove the skillet from heat.
  5. Prepare Sauce: In a medium bowl, whisk together the cranberry sauce, honey, Dijon mustard, balsamic vinegar, and chicken broth until well combined.
  6. Add Sauce to Chicken: Pour the cranberry sauce mixture evenly over the seared chicken breasts in the skillet.
  7. Bake Chicken: Place the oven-safe skillet uncovered in the preheated oven and bake for 12-15 minutes, or until the chicken’s internal temperature reaches 165°F (74°C). Cooking times may vary based on chicken thickness.
  8. Add Feta and Rosemary: Remove the skillet from the oven and immediately sprinkle the chicken with crumbled feta cheese and fresh chopped rosemary.
  9. Rest and Serve: Let the chicken rest for 5 minutes to allow juices to redistribute. Serve warm, topping with additional feta and rosemary if desired.

Notes

  • For homemade cranberry sauce, simmer fresh or frozen cranberries with sugar and water until thickened.
  • Use a meat thermometer to ensure the chicken reaches a safe internal temperature of 165°F.
  • If you don’t have an oven-safe skillet, transfer the chicken and sauce to a baking dish before placing in the oven.
  • Fresh rosemary can be substituted with thyme or oregano for a different herbal note.
  • This recipe can be doubled easily for larger gatherings.
