These Cranberry Brie Bites with Puff Pastry are a festive and delicious appetizer perfect for holiday gatherings. Featuring creamy Brie cheese, tangy cranberry sauce, and crunchy pecans all wrapped in flaky puff pastry, these baked bites are easy to make and sure to impress your guests.

Ingredients

Cheese

  • 1 (8 ounce) round Brie cheese

Pastry

  • 1 sheet frozen puff pastry, thawed in the refrigerator
  • Flour, for dusting work surface

Toppings and Garnish

  • 3/4 cup (215 g) cranberry sauce
  • 1/2 cup (55 g) finely chopped pecans
  • Sprigs of rosemary for garnish
  • Sea salt to taste

Instructions

  1. Prepare the Brie: Cut off and discard the rind from the Brie cheese. Place the cheese on a parchment-lined plate and freeze for 20 minutes to make it easier to cut.
  2. Preheat Oven and Prep Pan: Preheat your oven to 375℉ (190℃). Generously grease a 24-cup mini muffin pan with cooking spray and set aside.
  3. Roll and Cut Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry into a 10×14-inch rectangle. Cut lengthwise into 4 even strips, then crosswise into 6 even strips to yield 24 squares. Gently press each square into a muffin cup and prick the bottom with a fork.
  4. Cut Brie Pieces: Remove the chilled Brie from the freezer and cut into 24 pieces, approximately 3/4-inch each.
  5. Assemble Bites: Spoon 1 teaspoon of cranberry sauce into each puff pastry-lined muffin cup. Press a piece of Brie on top of the cranberry sauce, then add 1 teaspoon of chopped pecans. Sprinkle with a pinch of sea salt if desired.
  6. Bake: Bake the bites in the preheated oven until the pastry is golden brown and the Brie is melted, about 18 to 20 minutes.
  7. Cool and Serve: Allow the bites to cool slightly before removing them from the pan. Serve warm or at room temperature, garnished with rosemary sprigs.

Notes

  • Be generous when greasing the mini muffin tin to prevent the bites from sticking.
  • Remove the brie bites from the muffin pan while they are still hot to make releasing easier.
  • Store in an airtight container at room temperature for up to 3 days.
  • Freeze brie bites for up to 2 months. After cooling, freeze on a parchment-lined tray until firm, then transfer to an airtight container. Reheat from frozen at 350℉ for 10 to 15 minutes.
