Infused with fresh parsley, thyme, and a touch of lemon juice, this recipe is perfect for a comforting yet elegant meal that pairs beautifully with rice, pasta, or vegetables.

Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts
  • Salt and pepper, to taste

Butter Sauce

  • 1/2 cup unsalted butter (divided into two portions)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Preparation: Pat the chicken breasts dry with a paper towel, then season both sides generously with salt and pepper to ensure flavorful and well-seasoned meat.
  2. Cooking the Chicken: In a large skillet, melt half of the butter over medium-high heat. Add the chicken breasts and cook for 5 to 7 minutes on each side until they turn golden brown and are cooked through. Remove the chicken from the skillet and set aside on a plate.
  3. Making the Butter Sauce: In the same skillet, add the remaining butter and minced garlic. Sauté for about 1 minute until the garlic becomes fragrant but not browned to build a rich, aromatic base for the sauce.
  4. Adding Herbs and Lemon: Stir in the chopped parsley, fresh thyme, and lemon juice into the skillet. Mix well to combine the flavors creating a vibrant and zesty butter sauce.
  5. Finishing: Return the cooked chicken to the skillet and spoon the buttery garlic sauce generously over the chicken pieces. Allow the chicken to simmer in the sauce for an additional couple of minutes to soak up all the rich flavors.
  6. Serving: Serve the Cowboy Butter Chicken hot, garnished with extra parsley if desired. This dish pairs excellently with sides such as rice, pasta, or a fresh vegetable medley for a well-rounded meal.

Notes

  • Use fresh, high-quality chicken breasts for the best flavor and texture.
  • Do not overcook the chicken to keep it juicy and tender.
  • If you prefer, substitute fresh herbs with 1 teaspoon each of dried parsley and thyme, but fresh is recommended for optimal taste.
  • Adjust the amount of lemon juice to your taste preference for acidity.
  • Serve immediately to enjoy the sauce warm and flavorful.
