1/2 cup unsalted butter, softened
1 cup creamy peanut butter
2 3/4 cups confectioner’s sugar
2 tsp vanilla extract
Chocolate Coating
2 cups semi-sweet chocolate chips
2 Tbsp coconut oil

Prepare the Work Surface: Line a cookie sheet with parchment paper and set aside. This will be used to place the peanut butter eggs to chill and set.

Freeze the Eggs: Place all shaped peanut butter eggs on the prepared cookie sheet and freeze for at least one hour. This step firms them up, making them easier to dip and helping them keep their shape.
Prepare the Chocolate Coating: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
