Ingredients

Cookie Dough

  • 1 ¾ cup all-purpose flour (sifted and cooled)
  • 1 cup unsalted butter (softened to room temperature)
  • 1 ½ cup brown sugar (tightly packed)
  • ¼ cup sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ cup mini chocolate chips

Coating and Decoration

  • 10 oz dark chocolate melting wafers
  • Sprinkles (optional)

Instructions

  1. Mix Butter and Sugars: In a large bowl, use an electric mixer to beat softened butter with brown and white sugars together until the mixture is creamy and smooth.
  2. Add Vanilla and Salt: Stir in vanilla extract and salt thoroughly to incorporate the flavors evenly into the butter-sugar mixture.
  3. Incorporate Flour: Gradually add the sifted and cooled all-purpose flour, stirring continuously until the dough is completely combined and smooth.
  4. Mix in Chocolate Chips: Fold in the mini chocolate chips evenly throughout the cookie dough.
  5. Shape Dough Balls: Scoop the cookie dough into 1 ½ tablespoon-sized balls and roll each between your palms to form smooth balls.
  6. Chill Dough: Place the dough balls on a wax paper-lined cookie sheet and refrigerate for 20 minutes to firm up. Avoid chilling longer to ensure easy insertion of cake pop sticks.
  7. Prepare Stand: While chilling, prepare a box or piece of styrofoam by making tiny holes to secure the cake pop sticks upright later.
  8. Melt Chocolate: Melt the dark chocolate melting wafers in a small bowl according to the package instructions until smooth and ready for dipping.
  9. Assemble Pops: Dip one end of each cake pop stick about ½ inch into the melted chocolate and gently insert halfway into a chilled cookie dough ball for secure anchoring.
  10. Coat with Chocolate: Holding the stick, dip each cookie dough ball into the melted chocolate until fully coated. Allow excess chocolate to drip off.
  11. Add Sprinkles and Set: Immediately decorate with sprinkles if desired, then place the pops upright into the prepared foam or box to harden the chocolate coating.
