Classic Lemon Fluff Salad is a light, refreshing dessert combining crushed pineapple, instant lemon pudding, fresh lemon juice and zest, whipped topping, mini marshmallows, and coconut. Chilled to perfection, this fluffy, citrusy salad makes a perfect sweet and tangy treat for any occasion.

Ingredients

Pineapple Mixture

  • 20 oz crushed pineapple (undrained)
  • 3 oz instant lemon pudding mix
  • Juice and zest from 1 lemon

Mix-ins

  • 8 oz whipped topping (thawed)
  • 2 cups mini marshmallows
  • ½ cup coconut

Instructions

  1. Combine pineapple and pudding mix: In a large bowl, combine the undrained crushed pineapple with the instant lemon pudding mix, stirring well to combine the flavors evenly.
  2. Add lemon zest and juice: Zest one lemon directly into the bowl, then squeeze the juice from half of that lemon into the mixture. Stir thoroughly to blend all the citrus notes.
  3. Fold in whipped topping: Gently fold in the thawed whipped topping, incorporating it delicately to maintain a fluffy texture in the salad.
  4. Add marshmallows and coconut: Fold the mini marshmallows and coconut into the mixture until evenly distributed, ensuring each bite has a mix of sweet and chewy textures.
  5. Chill the salad: Cover the bowl and chill the lemon fluff salad in the refrigerator for 1 hour to allow the flavors to meld and the salad to set.
  6. Garnish and serve: Before serving, garnish with extra lemon slices, additional coconut, or mini marshmallows as desired for a festive and appealing presentation.

Notes

  • For a nuttier texture, consider adding chopped pecans or walnuts when folding in marshmallows and coconut.
  • Use fresh lemon juice for the best bright lemon flavor.
  • Ensure the whipped topping is fully thawed to blend smoothly with the pudding mixture.
  • Can be prepared up to a day in advance and kept refrigerated to enhance flavor development.
  • Substitute coconut with shredded freeze-dried fruits for variation.
